Bananas are back!

Last weekend, I bought a batch of pretty green bananas. In the past, the bananas I would get from the same store would be ripe in a couple of days. Well, boy was I wrong to expect the same this time!

It's day 7 of my banana riping journey, and only one, yes one, is actually yellow enough to be eaten! I love my oatmeal with banana, hence why there was a shortage of breakfast oatmeal this week!
But I couldn't wait any longer. Whipped banana oatmeal had to be made:

I added a spoonful of cottage cheese (a la Kath) and topped with Nature's Path Pumpkin Flax Granola, a few raisins, and coconut flakes.

It makes me feel so good eating it because it's a bar that will make a difference.
