Egg-in-a-basket? Toad-in-a-hole? Popeye eggs?
I've been here for 13 years, and I still don't know what to call this! Well... whatever it is, I would like to call it my Happyolk, after one of my favorite blogs - Happyolks, Recipes and Stories for Happy Folks! In addition to wholesome, original, and delicious recipes and breathtaking photography and videos, Kelsey writes inspiring, motivational, and thoughtful reflections on life. In doing so, she encourages us to think and reflect, too. I look forward to her posts every week.
I was excited for this breakfast since last night when I realized we still had one egg left of the batch that my mom's friend brought over (She has her own chicken! I still can't get over how great that is. She loves her chicken and takes very good care of her!).
This breakfast is so easy and yet feels so special - probably because I don't make it often and because it looks like it's from a restaurant (or I would like to think that it does!).
I love having my Happyolk with a slice of tomato. Feels fresh. Flavorful. Juicy. And the colors are just so vibrant and beautiful.
I'm off to visit M and friends. We are going to spend the day watching football. Well, the boys will be watching football, and the girls will be keeping each other company. :)
I just spent the morning making stuffed mushrooms for us. Recipe and photos to come!

I try to spread kindness and gratitude however I can, and this seemed to be an easy way to thank you for being you and for putting so much of yourself into Happyolks.
