Breakfast held me over for 4 hrs without a need for a morning snack. Must be the almond butter - protein and healthy fat! It seriously makes all the difference!
I quickly got tired of sitting at my desk... So it was time to do an ab workout and some leg raises while listening to lecture. Gotta love multi-functioning! Believe me, I don't normally look so happy when listening to lecture!

Lunch was one of my veggie favorites given that eggplant + tomato-anything is a match made in heaven and (1) I can eat tomatoes in any shape or form (2) Dominix Eggplant Cutlets always come to the rescue on days when time is limited!
Cutlets are pre-breaded and were simply baked in tomato sauce at 350F. On the side, more sauteed veggies! - zucchini, red bell pepper, eggplant, onion, garlic, and capers in tomato sauce. May be too much eggplant and tomatoes in one meal for one person, but I love it :)
Grandma's minestrone soup (she replaced pasta with potato!) on the side! Another one of her so-called "water + vegetable" recipes and an all-time favorite. (To be added to recipe list post exams!)
Any suggestions on exercises I can do while studying?
