As promised, I stayed away from my bowls for today's breakfast. It was time to use my beautiful new plate!
And so... It was pancake time!!! But not just any pancake... A protein pancake, inspired by the lovely Mama Pea (love her!). I felt that my meals yesterday were lacking in protein content, especially after my afternoon run. I decided to correct that with today's breakfast. These pancakes were AWESOME.
Ingredients:
- 1 scoop (30g) protein powder (I used Sun Warrior Vanilla)*
- 1/4 c. old fashioned oats
- 1/2 small ripe banana (mash before combining with the rest of the ingredients!)
- 1/2 t. baking powder
- 1/2 t. cinnamon
- 1-2 T. milk of choice (I used 1.5 T. Almond Breeze Unsweetened Original Almond Milk)
- pinch of salt
- few drops of vanilla extract
- *Please note: Because the protein powder I used is already flavored and slightly sweet, and because the banana was very ripe, there was no need to add any extra sugar/sweetener.
I used my handy-dandy

fork to combine all of the ingredients. Cooked on a warm skillet in a little bit of coconut oil to prevent scrambled pancakes. Make sure not to use a very hot skillet, or else the outside will cook very quickly, leaving the middle uncooked... Though there is nothing wrong with that - this pancake batter can be eaten raw. I sure did! ;)

Woo-hoo! Today marks the first time I've ever made pancakes for breakfast on {my eats & treats}. I'm so proud.
