The midnight cookie monster

Thursday's are my longest days that are entirely clinical. Best case scenario, I leave home at 7am and come home at 5pm... Worst case scenario, I get home at 10pm. Today should be the former!

Breakfast was simple but great! I don't eat eggs often, but when I do, I enjoy every bite (as the picture shows!)
I hard boiled the egg last night. (Note: after removing it from heat, replace the boiling hot water with cold water and let stand for about 10 min. This will make removing the eggshell hassle-free!)
On the side... Wasa crisp bread with Laughing Cow cheese. And a cup of coffee. Make that two :)

...did she have a cookie for breakfast?! Well... Not exactly but kinda sorta!

Last night I stumbled upon The Faux Martha's new post featuring "Baked Oatmeal To Go." As obsessed with oatmeal as I am, I got super excited even though my breakfast was already planned.

And everything was looking in favor of midnight baking... The recipe was quick , the baking time short, the ingredients all on hand, I needed something to keep me awake to get more work done, and I wanted to bake something for a friend of mine who has been feeling overwhelmed and down.

The above creation turned out great, but if you check out the original recipe, you will realize my product is nothing like that of Faux Martha! Probably because I completely forgot to add milk!

Note to self: If you know that your brain stops working after midnight, don't do things that require careful attention to instructions and calculations, like baking or tweaking original recipes... I decided to make half of the recipe and use coconut oil instead of butter. While I downsized correctly, I forgot about the 3/4 cup of milk... Oops? I also chose to use one egg white instead of one small egg.

It turned out great! Like a healthier version of an oatmeal cookie! So if you'd like to recreate my breakfast cookie, here is the accidentally modified recipe:

Ingredients: adopted from The Faux Martha
1 c. uncooked oats (I used old fashioned oats)
1/4 c. packed brown sugar
1/4 c. craisins
1 tbsp. chopped walnuts
1/2 tsp. baking powder
1/4 c. unsweetened applesauce
1 tbsp. coconut oil, melted
1 egg white, beaten

1. Preheat oven to 375°. Spray the baking pan (I used 9x9") or line with paper liners and set aside.
2. Combine first 5 ingredients in a medium bowl.
3. Combine the applesauce, coconut oil, and egg white.
4. Add liquid mixture to the oat mixture and stir well.
5. Scoop the batter into the baking pan. Bake for about 30 minutes or until edges begin to brown.
6. Enjoy with a cup of coffee or on-the-go!
